Black Bean, Corn, Avacado Quinoa Salad (or side dish!)

The original recipe from Karmatarian is SOOO delicious! If you want a dish to impress, this is it. Makes a great salad or, for a side dish, you can leave out the lettuce.

However, if you're just looking to make a quick meal at home or add a side, this is my "homey" version. Again, I use whatever vegetables I have.

1 cup Whole grain quinoa (cooked according to package directions)
I avacado (chopped)
1/4 cup chopped cilantro
2 tsp lemon juice (add to taste)
1/4 of a red (or yello) onion, chopped
1 can (or 1 1/2 cups) black beans (rinsed)
1 can (or 1 1/2 cups) corn
1 Tbs olive oil
1/2 tomato chopped (or halved cherry tomatoes)
Salt and pepper to taste

After quinoa is cooked, toss everything together! We usually top it with grilled chicken! If you want to blend up more cilantro, garlic, and olive oil for a dressing and add to lettuce, that would be tasty, too! Again, I don't always have all of the ingredients (yesterday, I made it without tomatoes and corn). Enjoy!
