Eating to a different beet!

In my box from the farm last week, I had a bunch of beets. Little, red ones with nice leaves. I finally looked up some ideas and am not sure why I didn't look this up earlier! I combined a few recipes ideas from Pretty Smart Raw Foods and the Raw Epicurean and came up with a delicious "raw slaw" :)

I used all my little beets (just three tiny ones)
Half a small fuji apple
about 1 Tbs red onions
1/4c red cabbage
1 tsp apple cidar vinegar
about 1 tsp horseraddish (I didn't find the unprepared, fresh, "rooty" stuff, so I grabbed a jar of "freshly prepared" horseraddish).

Using the shredding blade, I threw all the ingredients into my food processor and, viola! A beautiful, colorful, and TASTY slaw. For lunch tomorrow, I'm going to pack up the beet leaves and top it with the slaw. I don't have any rasins, but will throw on a few chopped up chunks of dates. I'm pretty excited!
