Chocolate chip un-"cook"-ies

These are SO good :) I've made them twice since I found the recipe on Saturday. I've shared them with a few friends with all thumbs up! Using the original recipe from an unsuspecting source, About.com, I personalized the recipe. All I can say is, ENJOY!!!

  • 1 cup raw walnuts, cashews or pecans (I use walnuts)
  • 2 tsp cacoa powder
  • 3-4 pitted dates (if you freeze your dates, soak them for just a minute or two)
  • 1 Tbs cacoa nibs
  • 1/4 cup unsweetened coconut flakes
Make a date paste by processing just the dates, add walnuts and cacoa powder. If the "dough" is a bit sticky, add a few more walnuts until the dough holds but isn't too sticky to touch. Once you've reached a good consistency, add the nibs and process only until they're evenly distributed.

Roll each cookie into a ball (the size is up to you) and then roll in the coconut. To make a nice, full coat, press the flakes into the cookie.
The first time I made these, it was too sticky. Second time, SOOOO delicious! For five ingredients, I'm pretty impressed!

  1. Tried this and love this one too! I never thought that I'd like dates, but they are great. :O) Keep on posting recipes and we'll keep on enjoying them. :O)
